For this you need minced meat. You can buy it at the store, but you will not know what it is made of or how conscientiously the meat was prepared before chopping. It is also unknown how much excess water and fat it contains (especially if it is frozen). With their increased content in minced meat, the products cannot be formed, and then it is impossible to fry normally, since they begin to break and fall apart.

Therefore, it is better to cook minced meat at home. To do this, you must select the part of the carcass that is optimal for chopping. It can be a neck, a low-fat brisket, a shoulder blade. The meat must be freed from excess fat and films, washed and dried. A whole piece can be passed through a meat grinder, or you can chop it with knives - then the cutlets will be much juicier and tastier. When choosing meat, you need to pay attention to the color of the fat: if it is yellow, the beef is very old, and the dish will come out tasteless. Too fatty meat is also not worth buying, as the excess tissue will have to be cut off.


Minced meat products are prepared quickly and easily. The main thing is to fry a sufficient amount of time over low heat, and then bring it to readiness in the oven (or at least under the lid of a frying pan). Insufficiently baked products have a bad smell and taste.

  • Beef broth - 1, 3 cups;
  • Tomato paste - 3 tablespoons;
