Melt the butter in a saucepan. Throw in a small amount of chopped onions and some grated carrots, about 100 g each. Once the vegetables are soaked in oil, add the mushrooms (500 g), cut into slices, and fry until a pleasant color. As soon as the mushrooms give off flavor, fill them with chicken broth a little more than half the saucepan, cover and cook.

There should be a lot of champignons. After a couple of minutes, you can add potatoes. Puree the whole mass, season and add cream to the desired consistency. As soon as your mashed potato and mushroom soup thickens, you can serve it with croutons and a slice of fresh champignon.

Potatoes with vegetables

Easier to perform - soup with vegetables and croutons. This recipe can be arbitrary, as you can add almost any vegetables. First of all, you need to put a portion of potatoes on the fire. Salt the water immediately.

In this case, it is better to put the chicken in hot water, since potato water plays an important role, but the meat will turn out to be soft and tender. If you want to focus on the rich broth, then put the breast in cold water. Throw in onions and carrots, as well as peppers and bay leaves.

After a while, remove the breast and spices. Add potatoes to the water, you can also put carrots and other vegetables in small quantities. As soon as all this is cooked, puree the mass with a blender. Leaving small pieces will only improve the dish.

Slowly pour in the cream (100 g per 2 L) and, stirring occasionally, put on low heat. To thicken the soup even more, beat in a couple of chicken eggs. The recipe for cheese croutons soup involves the use of processed cheese. For a small saucepan, 1-2 cheese curds are enough. To make them melt faster, it is better to grate them.
