Cream soup is a traditional European dish, but only recently has it gained popularity in our country. It is considered a non-nutritive food, so it is often prepared by people who want to lose weight. Many people confuse cream soup with cream soup, but there is a significant difference between the two.


To prepare the first type of this dish, cooks use a broth to which vegetables are added and cooked to a puree state. The cream soup is made with a creamy or milk base, which is why it turns out to be so tender.

Vegetables chopped in a blender are added to this base. Sometimes, to make the soup as dietary as possible, the addition of oil is excluded. Traditionally, cream soup is prepared in this way: first, all components are boiled or fried, then whipped with a blender. Then the chopped vegetables are bred in broth, water or a creamy base.

Such a ready-made first course must necessarily be homogeneous, without lumps of flour and unwashed vegetables.

Traditional recipes

If you want to diversify your diet with a delicious cream soup, you can use the following traditional recipes for preparing this unusual first course for us.

Mushroom cream soup


  • 2 liters of broth;
  • half a kilo of champignons;
  • one onion;
  • 200 ml of cream;
  • bread.

Cooking method:

  1. Chop mushrooms and onions, fry for an average of 10 minutes, until they become soft;
  2. Place the fried vegetables in a blender, add cream and a little chicken broth, beat everything well. Pour into the rest of the broth;

Serve with breadcrumbs. To prepare croutons, you need to cut the bread into cubes, put in the microwave or oven for 2-3 minutes.

Chicken cream soup


  • 300 g peas;
  • vegetable oil;
  • 2 potatoes;
  • one onion;
  • 250 ml cream;
  • 1 carrot;
  • 6 chicken drumsticks without skin;
  • salt, pepper, bay leaf.

Cooking method:

  1. Pour chicken drumsticks with 1.5 liters of water, cook for ten minutes;
  2. Cut the potatoes, put in a saucepan, cook for twenty minutes, then strain the broth;
  3. Separate the meat from the bones, chop it together with the potatoes in a blender, put it back in the pan, pour the broth;
  4. Add salt, pepper, bay leaf, cook for 7 minutes;
  5. Grind green peas in a blender, add cream to it, beat well, put in soup and cook for another 5 minutes;
  6. Chop carrots and onions, fry and send to a saucepan.

The soup can be served with breadcrumbs.

Tomato soup with croutons

  • tomatoes - 500 g;
  • three cloves of garlic;
  • one onion;
  • 2 tbsp. l. vegetable oil;
  • a spoonful of vinegar;
  • two pieces of ciabatta;
  • basil, leek;
  • salt, sugar, pepper.

Cooking method:

  1. Cut the tomatoes into cubes;
  2. Chop the onion and garlic, fry in oil, add salt and pepper to the tomatoes, simmer until soft. Beat vegetables in a blender;
  3. Cut the ciabatta into chunks, roll in pesto sauce and fry until crisp;
  4. Boil water, add vinegar;
  5. Pour the soup into a bowl, sprinkle with chopped basil and leeks.

When serving, place croutons around the edges of the bowl.

Vegetable first courses

Almost all culinary recipes for making cream soup are based on the use of fresh vegetables, because such a first course will not only be tasty, but also as healthy as possible. Cauliflower, broccoli, pumpkin, spinach are often used in cooking.

Cauliflower cream soup


  • 2 tbsp. l. butter;
  • one onion;
  • 4 cloves of garlic;
  • 2 potatoes;
  • 2 carrots;
  • 1 liter of water;
  • 1 head of cauliflower;
  • a glass of milk;
  • salt pepper;
  • a spoonful of fortified wine;
  • greens.

Cooking method:

  1. Melt butter in a saucepan for soup, put chopped onion in it and simmer until transparent for about five minutes. Add chopped potatoes and carrots, cook for another 5 minutes;
  2. Pour the broth into a saucepan with vegetables. Disassemble cauliflower into inflorescences, put in broth, cook for 20 minutes;
  3. Beat all vegetables in a blender, place in a saucepan, pour milk into it. Add salt, pepper, fortified wine;
  4. Pour the soup into bowls and sprinkle with herbs on top.

Broccoli soup


  • 1 kg broccoli;
  • one onion;
  • 1 liter of broth;
  • 100 ml 25% cream;
  • 5 cloves of garlic;
  • Art. l. vegetable oil;
  • pepper, sea salt.

Cooking method:

  1. Fry chopped onion and garlic in a saucepan. Put chopped broccoli there, salt and pepper and simmer vegetables over low heat;
  2. Add a liter of broth to a saucepan, and bring to a boil over low heat;
  3. Remove from heat, beat with a blender and put on fire again;
  4. Heat the cream in a skillet and send it to the pan with the broth.

This unusual recipe can be used in the process of preparing healthy food for children.

Pumpkin Cream Soup Recipe


Pumpkin cream soup is prepared very simply and quickly, and as a result, the housewives get an appetizing first course, rich in vitamins and minerals. Children like this soup because of its bright color.


  • 1 kg pumpkin;
  • 1 onion;
  • 2 cloves of garlic;
  • 50 g butter;
  • 100 ml cream;
  • 2 tbsp. l. vegetable oil;
  • salt pepper;
  • 1 liter of broth or water.

Cooking method:

  1. Cut the pumpkin into small slices, removing the skin and all seeds.
  2. Chop the onion, grate the garlic.
  3. Fry the onions in a saucepan with a thick bottom in vegetable oil.
  4. Add garlic and fry too, put pumpkin in a saucepan, fry for 6 minutes.
  5. Pour in broth or water, cook for about 20 minutes.
  6. Beat the soup on a blender, add salt and pepper.
  7. For piquancy, you can add a little ginger to the finished soup.
