Classic Belgian Waffle Recipe
Ingredients:
- flour - 200 g;
- sugar - 30 g;
- milk - 250 ml;
- salt - a pinch;
- eggs - 2-3 pcs;
- butter 100-120 g;

- The yolks are separated from the proteins. Beat the yolks in a separate bowl with butter. The result should be a homogeneous mass;
- The proteins are cooled slightly in the refrigerator. Then beat until lather. The resulting protein mass is added to the yolk mixture. Mix thoroughly again until a homogeneous consistency is obtained;
- To bake according to the classic recipe, grease each waffle iron plate with butter. The dough is poured onto a plate and baked.
Attention! Immediately after removing the wafers from the wafers, they will be soft. They will become crunchy only after they have completely cooled down.
You can decorate the dessert with syrups, jam, fresh berries or yogurt.
Flemish Belgian Waffles
The peculiarity of this type is crispy edges and a soft center.
Ingredients:
- flour (sifted) - 400 g;
- milk - 400 ml;
- yeast (dry) - 5-10 g;
- sugar - 40 g;
- eggs - 2-3 pcs;
- butter - 100-120 g;
- vanillin on the tip of a knife;
- cognac - 3-4 tbsp. l.

Image - Powdered yeast is diluted in a quarter of a glass of milk and left until it foams;
- Sugar and salt are added to the sifted flour. One egg is also driven in here. The ingredients are mixed thoroughly until smooth;
- Foamed yeast is added to the mixture. The mixture is stirred again until smooth;
- The remaining eggs are added to the resulting mass and the milk is poured.
- The dough is kneaded until smooth, then cognac, melted butter and vanillin are added. The bowl is tightly covered with plastic wrap and left in a warm place for an hour and a half.
Knead the finished dough before baking. And only after that put it on the plates.
Serve with sweet syrup, ice cream, cottage cheese or fresh fruit. It is tastier if dessert is served immediately after preparation for hot coffee or tea.
Brussels waffles
Ingredients:
- flour sifted through a sieve - 1, 5-2 cups;
- light beer - 1-1, 5 glasses;
- vegetable oil - 3 tbsp. l;
- orange or lemon zest - 2-3 tbsp. l;

- eggs - 1 piece;
- freshly squeezed lemon juice - 1 tsp;
- salt - 1/2 tsp.
Cooking method:
- All dry ingredients are mixed in a separate container until smooth;
- The egg, light beer, lemon juice and vegetable oil are mixed in a separate bowl;
- Each mixture must be of a uniform consistency;
- Then both mixtures are combined and kneaded.
This type of waffle should be baked for 2-3 minutes.
It should be noted that due to the presence of light beer, the crust acquires a beautiful caramel color, and the taste becomes very unusual.
Liège waffles
Ingredients:
- flour - 500-600 g;
- eggs - 3 pieces;
- dry yeast - 10 g;
- milk - a glass;
- vanillin - 5-7 g;
- butter - 250 g;
- salt - 1/4 tsp;
- sugar - 1, 5 cups.
Cooking method:
- Separate half of the milk and dilute dry yeast in it. The mixture will take ten to fifteen minutes;
- Beat the cooled eggs with the remaining milk and salt;
- The finished egg mixture is mixed with melted butter;
- Add yeast with milk and sifted flour, knead. Attention! The dough should be sticky and soft;
- The container is covered with plastic wrap and placed in a warm place for about an hour and a half.
- After an hour, divide the mixture into parts. Each is rolled in sugar before baking.
American Belgian Waffles
Ingredients:

- margarine - 150-200 g;
- milk - 1, 5-2 glasses;
- eggs - 4 pieces;
- granulated sugar - 1-1, 5 cups;
- mineral water - a glass;
- vanilla sugar - tsp;
- salt - 1/4 tsp;
- baking powder - 10 g.
Cooking method:
- The whites and yolks are separated. The yolks are ground with sugar, and the whites are whipped into a thick white foam;
- Yolks, softened margarine and vanilla sugar are mixed in a separate container. Sifted flour, salt and baking powder are also added here;
- Pour in milk and mix thoroughly;
- Mineral water and protein are added. The dough is kneaded again until a homogeneous consistency is obtained;
- The dessert is baked in the same way as in the previous recipes.
Belgian waffles: a recipe without eggs
Ingredients:
- flour sifted through a sieve - 2, 5 cups;
- baking powder - 2 tsp;
- baking soda - ½ tsp;
- sugar - 4 tbsp. l;
- milk - 600 g;
- butter - 3 tbsp. l;
- cinnamon, nutmeg - to taste;
- vanilla sugar - package;
- turmeric - 1/3 tsp

Image - All liquid ingredients are mixed in one container, and dry ingredients in the other;
- The liquid mixture is gradually added to the dry one. Attention! As a result, the consistency should be uniform, no lumps. The thickness should be about the same as in the pancake dough. If the consistency is thick, add milk, if it is liquid, add flour;
- The waffle iron is greased and preheated. Spread the dough on it. Attention! Dessert is ready only if the pastry does not break when you open the waffle iron.
Useful Tips
If you want your dessert to remain crisp for longer, do not stack the waffles on top of each other immediately after cooking. Better to let them cool on a wire rack.
The filling is applied before serving. Otherwise, the dessert will get wet and no longer tasty.
Used as a filling:
- Condensed milk, honey or thick jam;
- Custard. Butter cream for cakes is also suitable. Decorate the top with nuts;
- Fresh berries or fruits. They also make assorted items. For decoration, pieces of fruit are poured over with sweet syrup. Attention! There should not be too much syrup, the dessert will get wet;
- Cheese mass. Dried fruits are used as decoration - raisins, chopped dried apricots or prunes. The cheese mass is poured with chocolate;
- Suitable for decorating ice cream or pastry cream. An additional decoration is mint leaves.
